What do I do if my honey crystallizes?
Do not microwave! Put your honey in a heat safe container and put that container in a pot of boiling water to warm it through. Then stir and store.
What is the expiration date on honey?
Ummmm… never? When harvested and stored properly, honey can last thousands of years. Just recently, honey that was still good was recovered from the tombs in the pyramids of Egypt! Honey is naturally anti-microbial so it keeps extra well.
Raw vs. Processed honey
Processed honey undergoes an extra series of steps to keep it from crystallizing or fermenting and have a longer shelf life before being packaged. It gets flash pasteurized, killing the enzymes and amino acids. It then gets filtered even further, removing the pollens that most people want! This is why we always promote RAW local honey. The only filtering we do is straining. We strain all the detritus that no one really wants to consume (think bee legs and large chunks of wax).
Can I leave my honey in my car?
It depends on the temperature outside. As long as your car does not reach 100 degrees, it won’t affect your honey. After that point it will kill the living enzymes and anti-microbial properties you want in your honey. You also don’t want it to freeze either.
Can I use a metal dipper or spoon?
We have heard so much controversy on this topic! For a long time it was said to never put a metal spoon in your honey or it will ruin it. That has been proven false. You may use a metal dipper or a spoon and it won’t kill the enzymes. Back when metal was still being manufactured with lead it could definitely be harmful. You will also find that the companies advertising those cute little wooden honey dippers promote this message of metal ruining your honey.

Why should I have my lumber dried?
Green lumber will bow, warp, cup, check, etc. so the dimensions on your project will change over time. The wood can also crack and split which can be unsightly. We do not recommend using green lumber for any project reliant on dimension accuracy or detailed work. Having your lumber dried also shortens your project time as it’s much faster than waiting for it to air dry.
Why a solar kiln instead of dehumidification?
A solar kiln does not induce nearly as much internal stress on the lumber as a dehumidification style kiln would. Overall a solar kiln is more gentle as it allows the wood to relax when the sun goes down. However this process does take longer than a dehumidification kiln. Solar kilns are reliant on warm sunny days to be most efficient.
